🌶️ The Secret Algerian Sauce (Recipe)

The secret to a real "Tacos Lyonnais" or "Tacos Marocain" is the Sauce Algérienne. Most people use raw onions, but the restaurant secret is slight caramelization.

  • ✔️ 1 cup Quality Mayonnaise
  • ✔️ 1 small Onion (finely minced & sautéed)
  • ✔️ 1 tsp Tomato Paste & 1 tsp Harissa
  • ✔️ 1 tsp Smoked Paprika & Cumin
  • ✔️ Fresh Parsley and a squeeze of Lemon

Method: Sauté minced onions for 2 mins until soft. Mix with all other ingredients. Chill for 30 mins to let the spices "bloom."

The Chicken Marinade (Tacos Poulet)

For Power Health, we use chicken breast for lean protein. The secret to keeping it juicy is yogurt.

  • 600g Chicken Breast (cubed)
  • 2 Tbsp Plain Yogurt
  • Garlic, Curry Powder, and Poultry Spice

Step-by-Step Assembly

  1. Sear the Chicken: Cook on high heat to lock in juices until golden brown.
  2. The Cheese Sauce: Melt 200ml cream with 100g grated cheese (Emmental/Mozzarella) until thick.
  3. Layering: Spread Algerian sauce on a large tortilla. Add air-fried potatoes (our healthy hack!), chicken, and pour the cheese sauce over.
  4. The Press: Fold into a rectangle and toast in a Panini press until crispy.
